Welcome to tasty treats where we begin the mouth-watering journey to explore India’s rich and diverse cuisine. In my first blog, I am exploring Hyderabad also called the City of Nizam. Hyderabad is known for its historical significance and cultural diversity.
The Culinary Heritage of Hyderabad:
Hyderabadi cuisine also known as Deccani cuisine is an exquisite blend of Mughal, Turkish, and Arabic cuisine. The spices and cooking method we use is a blend of Turkish, Arabic, and Telgu that gives a unique flavor.
Iconic Hyderabadi Dishes
1) Hyderabadi Briyani: Hyderabadi biryani is famous not only in India but also globally and is also known as Dum biryani. People love its aroma and rich flavor of spices. Briyani is cooked with marinated meat like chicken or mutton. In marination, we use meat, species, saffron, and curd blend it properly, and kept for the rest at least 3o minutes. We use basmati rice in biryani and cook using the Dum method which is a slow cooking technique that releases the fragrance of spices and blends with meat and rice.
2) Mirchi ka salan: A classic Hyderabadi curry, Mirchi Ka Salan is made from long green chilies cooked in gravy made from peanuts, sesame seeds, and coconut. Despite its name, the dish is not too spicy but rather offers a balanced and complex flavor. Mirchi ka salan serve with biryani.
3) Haleem: Haleem is a slow cooking process it takes an hour to cook. Haleem is cooked with meat, lentils, and wheat, and seasoned with aromatic spices. This dish is cooked during the month of Ramadan.
4) Double ka Meetha: Double ka meetha is cooked with fried bread slices soaked in milk and sugar syrup for flavor. Then we add saffron, and cardamom, and serve with nuts and raisins. This dessert tastes heavenly.
